15thJune – Spanish classsics
I have had my share of horrid Spanish food, but having spent so much of my childhood and, indeed, grown up leisure time, in Catalunya, I have also had my share of the real thing. We cover the basics of a proper paella, croquetas de jamon, gazpacho Andaluz, pimientos de Padrón and tortilla as well as passing on the great cheat version as proposed by Ferran Adria, arguably the world’s greatest chef. We will also discuss the difference between Spanish and Italian hams and make some groovy, easy tapas (clams, mini chorizo, almendras etc)
28thJune - Vegan with Carniverous overtones.
Designed with parents of recently veganised children, where the rest of the household isn’t necessarily in agreement, this is a range of dishes that are designed without the use of any animal or fish products, but they generally can be enhanced with addition of a fillet of salmon, a prawn or two or a juicy steak. But they don’t need it – they’ve bags of flavour and interest on their own. Black pepper tofu, simple stir fries, glass noodles with edemame beans, green squash curry and hot and sour soup and the Basque tomato and pepper dish piperade. Lovely stuff, easy and filling.
The party season has been busy as ever, but there are dates that I am available. I have also been doing picnics for Glyndebourne, Kew and Henley if you need some help. Remember, the more notice you can give me, the easier it is.
